The Best of America's Test Kitchen 2009: The Year's Best Recipes, Equipment Reviews, and Tastings (Best of America's Test Kitchen Cookbook: The Year's Best Recipes) ReviewI'm a little hesitant these days on rushing out to purchase each and every America's Test Kitchen cookbook. Some are spectacular while others are not of much use to everyday cooks like me. Here's a GREAT one:
The America's Test Kitchen Family Baking Book
...and here's a lame one:
Americas Best Lost Recipes: 121 heirloom recipes too good to forgetIf you've seen the PBS Television Program, "America's Test Kitchen," then you'll know why people are so attracted to their spin-off cookbooks. Program Host Christopher Kimball's mantra is, "We do the work so you don't have to." And they do. Their recipes are quite excellent, (but not necessarily "the very best" in all cases.)
For this cookbook, we're getting the "crème of the crop" of the organization's best 200 recipes from this past year. The editors have also included information from two of the program's popular cameo features, the culinary equipment reviews and, the "tasting" reviews.
Here are the book chapters:
1. Introduction
2. Starters & Salads
3. Soups & Stews
4. Vegetables & Side Dishes
5. Breakfast & Breads
6. Pasta
7. Meat
8. Poultry
9. Seafood
10. Desserts
11. Test Kitchen Resources
12. IndexI have tried a number of these down-to-earth recipes and they're just great. The average cook will find many old stand-bys in here (much improved in most instances) and a good number of innovative recipes which will spark the family's interest at the supper table.
I have only two so-so issues with this cookbook:
-- Due to some overkill in giving details on recipe background and in the recipe preparation(s), the font size is resultantly pretty darn small. You'll find it difficult to post this cookbook in your kitchen and then read along as you cook -- you'll need to squint your eyes.
-- In the tasting section, I found myself frequently disagreeing with the selections which have been recommended and thus, they do me little good. As an example, they recommend Prego Marinara Italian [pasta] Sauce, a product which practically makes me physically ill when I taste it. Conversely they do not recommend Classico Tomato & Basil Pasta Sauce, which is one of my big favorites. Whether I'm right or wrong is not the issue -- the fact is that we all have our preferences and these judgments are so very subjective from person to person that I question the value of including this section in the book. The equipment section (a version of consumer reports) is pretty spot-on, these items not being quite so dependent upon our personal likes and dislikes. With kitchen equipment, most folks seem to share their likes for the same good features. In fact, I bought the pepper mill that they recommended and I find that it suits me just fine.
The book, at 360 pages in length and 8 ½" x 11" x 1" in dimension, is very nicely bound with a rugged dust jacket. The pages are of heavy stock and you'll discover a profusion of helpful illustrations which mostly facilitate better culinary techniques. There are also lots of color photographs of the various completed dishes found throughout the book.
In summary, while this is not a foundational, general cookbook, it's still a great supplement to such works. Noting my minor reservations above, I can recommend it but you might want to check it out at the public library first, before buying, to see if it fits your personal needs.
The Best of America's Test Kitchen 2009: The Year's Best Recipes, Equipment Reviews, and Tastings (Best of America's Test Kitchen Cookbook: The Year's Best Recipes) OverviewThere's only one book that brings the best of the nearly 1,000 recipes we develop each year directly to America's Test Kitchen fans. The Best of America's Test Kitchen 2009 is a virtual yearbook of the most interesting work produced by the kitchen, pulled together from every corner of our company: Cook's Illustrated and Cook's Country magazines, our bi-monthly special interest publications, our best-selling cookbooks, and our award winning public television shows. Each test cook's voice comes through clearly in the first-person narratives that accompany each master recipe providing an intimate peek into our testing process. This year's collection of more than 200 recipes includes: Southern-Style Skillet Cornbread (from Cook's Country), Lasagna di Carnivale (The Best International Recipe), and Apricot Almond Bundt Cake (The America's Test Kitchen Family Baking Book).Notes from the Test Kitchen accompany each recipe where we keep the home cook on the right path - from ingredient and equipment particulars to techniques. We've also created a substantial resource section, complete with six in-depth two-page spreads from Cook's Illustrated magazine featuring how-to guides like Mastering the Art of Stew; and Stocking a Baking Pantry. This major section also features the year's best quick tips, as well as the testings and tastings from both Cook's Illustrated and Cook's Country magazines. Fabulous & Flourless: 150 Wheatless and Dairy-Free Desserts, Cakes, Tarts, Tortes, Roulades, Puddings, Souffles, Cookies, and More ReviewContains excellent info on working with many kinds of ground nuts for baking. The results are exactly like what you'd find in a fine Viennese konditerei. GF flour is typically used to dust pans. And, if you're tired of eating rubbery baked goods, there's no xantham/guar gum in these recipes. I've made about 12 recipes and they are clearly written and easy to follow. Not too many weird/hard to obtain ingredients. Invest in a good quality spring-form pan (~$15) if you buy this book.Fabulous & Flourless: 150 Wheatless and Dairy-Free Desserts, Cakes, Tarts, Tortes, Roulades, Puddings, Souffles, Cookies, and More OverviewThe Bakers of Austria-Hungary-which included the author's hometown, Prague-learned that the secret to creating rich, silky, delicious desserts was to use ground nuts instead of flour. Mary Wachtel Mauksch grew up making and savoring the special cakes, tarts, puddings, cookies, and candies that had been passed down from family and friends. In Fabulous & Flourless she shares over 150 of these luscious desserts and accompaniments. Fabulous & Flourless provides recipes for traditional Viennese pastries, which do not use flour, allowing those with wheat gluten allergies to enjoy their favorite desserts without missing out on any of the richness and delicious flavor. Whether for nut and fine pastry lovers or for those allergic to wheat, Fabulous & Flourless is a dessert recipe collection that will add richness to everyone's cookbook shelf. Some of the Fabulous Recipes: Brazil Nut Tutti Frutti Cake Spanish Hazelnut Chocolate Cake Two-Toned Almond Lemon Cake Chestnut Chocolate Pudding Walnut Roulade Almond Spice Cookies Cashew-Coffee Dollops Chocolate-Chip Coconut Macaroons Turinois (French Chestnut Fudge)

Salty Sweets: Delectable Desserts and Tempting Treats With a Sublime Kiss of Salt ReviewOh, how I wanted to love this cookbook. I awaited its arrival and was anxious to dive in and get baking. I would have happily gushed about the results and the wonderful treats in store for anyone lucky enough to have this book. Instead what I found, like another reviewer, is a book produced to capitalize on the current salty/sweet trend and provide little of value or substance to the reader. The book only contains 70 recipes and except for the addition of a variety of coarse salts, the vast majority are basic, common recipes found in any general cookbook. I compared the basic recipes and these should bake up just fine, but that isn't enough to give the book a higher rating -- that is the bare minimum -- it is what is expected. We deserve more.
There is little inspiration included in this book. Basic chocolate chip cookies with an extra bit of coarse salt sound fine, and I'm sure I'll try it the next time I make a batch, but I've already been experimenting with that -- it isn't rocket science. I took a basic banana walnut muffin recipe and added bittersweet chocolate chunks and topped each with a tiny pinch of coarse sea salt. They were delicious. Should I write a cookbook? There rests the problem in looking at a grouping of largely basic recipes and finding the main change is a pinch of salt. It just isn't enough -- the recipes need to be fresh new creations, not old standbys.
Do we need another recipe for Snickerdoodles, Peanut Butter Fudge or Hot Cocoa? Well, actually we do if there is a fabulous twist that brings new life to an old favorite, but that takes more than a pinch of salt, and you won't find that in this book. Naming a few more of the inspirational recipes -- S'Mores, yes, they are included, along with Kettle Corn and Dark Chocolate Covered Pretzels. 70 recipes, and the only reason I gave it two stars instead of one is because the photographs were nice, although it would have been generous of the publisher to include a photo for each of the 70 recipes, but they didn't.
If considering this as a gift for an experienced baker or cook, skip it because it has little substance and they will be disappointed. It would probably be okay for a novice baker not in possession of a core selection of good solid cookbooks -- all of which would contain the majority of these basic recipes, but for the price of this book a much more thorough cookbook would be a better investment. This book is simply not a keeper and wasn't published to be an enduring classic.
Salty Sweets: Delectable Desserts and Tempting Treats With a Sublime Kiss of Salt OverviewSalted Caramels, Butterscotch Brownies, and Nantucket Sea Salt Ice Cream are just a few of the mouthwatering recipes that Christie Matheson presents in Salty Sweets, the first book devoted to this delicious combination of flavors. Salty sweets seem to be everywhere these days, and with good reason: a sprinkling of salt intensifies the sweet taste of many favorite desserts. The seven chapters here include candies, cookies, cakes, puddings, fruits, ice cream, and dessert sauces.

Sweet Gratitude: A New World of Raw Desserts ReviewThis is an amazing followup to their excellent 'I am Grateful' book. I have been eating raw foods for over 20 years, and live with my husband and kids who don't follow a raw food diet. We all agree these are the best desserts we have ever tasted. I have seen many raw food deserts from many books, but these set a new standard for raw chefs everywhere. Eating the tiramasu and the cheesecakes almost made time stop! I suggest you make these desserts when you have nothing pressing on your agenda, because you may just forget everything else.Sweet Gratitude: A New World of Raw Desserts OverviewSweet Gratitude is a cookbook with a message: raw desserts aren't only healthier for both people and the planet, they can also be every bit as tasty–indeed, sinfully so–as their mainstream counterparts. Tiziana Tamborra and Matthew Rogers, both master dessert chefs at the pioneering San Francisco-based Café Gratitude, present a tantalizing table of after-dinner or any-occasion delights. Illustrated with gorgeous color photographs, the recipes range from simple and quick to advanced and detailed, showing how versatile commonly used fruits and nuts are for whipping up innovative and beautiful desserts. Providing authoritative information on techniques and specialty ingredients, and emphasizing the seasonal and the regional, Sweet Gratitude contains fresh takes on old favorites like pumpkin pie and tiramisu, as well as ingenious new creations like Pomegranate Fig Tart, Brazil Nut Chocolate Ganache, and Shortbread Thumbprint Cookies with Goji Berry Jam. Ideal for anyone looking for healthier dessert choices as well as a valuable resource for people with special dietary needs including those who cannot consume dairy, gluten, or refined sugar, Sweet Gratitude shows readers how to craft what may be the most elusive item in the culinary canon: the guilt-free dessert!
