Food Justice (Food, Health, and the Environment) ReviewI work with the authors and had seen some outlines and early drafts, so I knew that the book was going to cover some interesting ground.
But I had a chance to read the book in more detail over the Thanksgiving break and was impressed with how it blends analysis of what's wrong with how we grow, sell, and eat food; with ideas for fixing these problems and stories about how people around the country (and world) are making progress towards food justice. The book is nicely organized following the cycle of food from seed to plate. It travels from the ultra-local (school gardens and neighborhood activism) to global trade.
I also like how 'food justice' bridges a gap between 'foodies'- people concerned with local food, slow food, organics etc who have usually been assumed to be primarily middle class folks with time and money to dedicate to figuring out where there food came from; and lower income people organizing for access to healthy food and for decent jobs in the food economy. The book opens with an account of youth in New Orleans and reminds us that farm workers were among the first to draw attention to the costs and benefits of the food system.
There are good books out there about healthy eating, about the problems associated with industrial agriculture and with fast food, and about a DIY/ grow-it-yourself local food perspective. Food Justice distinguishes itself by weaving these threads together and by reminding us that those with the least often do the most to ensure good food for all.

Heartland: The Cookbook Review
The Heartland, referring to the Midwestern states is well named as those states are in the center of our country. Of course, we're currently speaking of 12 states - Ohio, Indiana, Michigan, Illinois, Iowa, Wisconsin, North Dakota, south Dakota, Minnesota, Missouri, Kansas and Nebraska. For those of us who were born in anyone of these states, although we have moved far away, that home state is still held in our hearts. We would agree with geographer James Shortridge who is quoted in the Introduction, "The Midwest is America's pastoral face, etched into our consciousness as a permanent physical location, despite the presence of industrial cities.' True for this reviewer.
What is also true for me and perhaps for you thoughts of home in the Midwest bring to mind good, hearty, healthful food. Not the kind we now find at drive-ins but the delicious homemade dishes we remember, and here they are again in this comprehensive, beautifully illustrated cookbook HEARTLAND. However, the author has put a definite twist on these recipes as all are made with very modern cooking methods ensuring not only easier preparation but a much shorter preparation time than our mothers knew.
You'll find recipes for breakfasts and brunches, appetizers, salads and soups, main dishes and desserts. There is 272 pages of pure enjoyment as in addition to recipes Fertig has included anecdotes, historical data, and quotations - all with a Midwestern flavor. In addition, for this reviewer much of the pleasure of opening a new cookbook is being introduced to valuable resources through the author's noted references. I discovered La Quercia in Norwalk, Iowa. This is a gem of a shop offering artisan crafted dry cured meats and other mouth watering difficult to find items. We've particularly enjoyed their prosciutto (wonderful on a crostino) and pancetta. Our order was carefully packed and swiftly delivered. You'll find them at www.laquercia.us.
Midwesterners are a diverse group so you'll find many ethnically inspired dishes in HEARTLAND.Plus, those wonderful quotations, such as "Moonlight butters the whole Iowa night. Clover and corn smells are thick as syrup." from one of my favorite authors W. P. Kinsella.

The Flavor Bible: The Essential Guide to Culinary Creativity, Based on the Wisdom of America's Most Imaginative Chefs ReviewI recently added this book to my cookbook collection, which numbers more than 1,000 volumes (probably more like 1200 but I'm still cataloging). It has immediately become one of my favorites (and definitely my #1 favorite in English). If you are a serious cook, love to read cookbooks like novels, and view recipes as suggestions rather than as requiring strict adherence to precise measurements, then this is the book for you! (Did I say I LOVE this book?)
I make all of the desserts for my husband's restaurant. If I snag some particularly luscious fruit and want to make it into a dessert, this is the book I reach for first. I don't WANT to be told how to make a fruit sorbet. I already know how. But I love having a list of suggested flavors and products that go with what I already have. It's like having an uber-creative friend at your side saying "hey, why not try THIS?"
And if you are not an experienced cook, this book provides invaluable guidance that a recipe book never could. It is wholly different from every food book I have ever read.
The book is clever, useful, and obviously the product of prodigious research. To the authors, I send my humble gratitude. You have made my life immeasurably easier, and my dishes far more interesting than ever before.
This book is a must-read if you love to eat or love to cook. I have already bought six copies and have given two as gifts. It's THAT good.

Feeding a Yen: Savoring Local Specialties, from Kansas City to Cuzco ReviewI began reading The New Yorker in college, back in the early `60s -- mostly for the cartoons, I admit, but it wasn't long before I discovered the often witty and always beautifully written essays of Calvin Trillin. As a food-lover, I especially enjoyed his culinary pieces, since collected in three volumes beginning with American Fried in 1974. The last, Third Helpings, appeared in 1983, so it's been along dry spell, but now he's back with a new series of adventures that will make you salivate. The chapter in which he tries to get his daughter to promise she'll move back to New York from San Francisco if he can find a dependable source of pumpernickel bagels makes him sound Manhattan-centric, but he also writes a paean to boudin (which, even living in south Louisiana, I confess I don't care for at all), and another to the posole found in Taos (which I like very much). And there's a chapter on nutria sauce piquante that's a real hoot (think sheep-sized rodents). And there's San Francisco burritos, and Casamento's oyster loaf, and fried fish in Barbados, and pimientos in Galicia, and a number of other foodstuffs to be considered. This is a great book to read when you're sitting in the staff room at work, munching mindlessly on a homemade tuna sandwich and a bag of Fritos.Feeding a Yen: Savoring Local Specialties, from Kansas City to Cuzco Overview

The New Complete Coffee Book: A Gourmet Guide to Buying, Brewing, and Cooking Review"The New Complete Coffee Book" is an excellent coffee table book on coffee. It tells you most of what you need to know, and is impressively presented in a way which would look good on any coffee table.
Nonetheless, this book could, I feel, have done with a few more basic bits of information. I would have enjoyed a section on how to make basic coffee (ie latte, cappucino, machiato) - even if these are considered 'simple' coffee making skills. Also, a bit more information on the different aspects of different coffee region produce would have been good. Furthermore, there is a section on savoury coffee meals (lamb with coffee rub, anyone?) which can at best be described as superflous.
On the whole, though, the book is pretty damn good, and certainly worthy of purchase. Covering the latest in the coffee craze, it includes dozens of recipes for every coffee drink imaginable, from the sternly efficient Espresso (the rocket fuel of coffees) to the indulgent Cappuccino Borgia Milkshake. Author Sara Perry gives us the 411 on coffee history, production, and lore. If that werent enough, she adds 40 recipes for delicious, internationally inspired treats (both sweets and savories) using coffee as a main ingredient. Paired with smart-looking photographs, this is a handsome exploration of a precious commodity and the hundreds of ways to enjoy it.

The Best of America's Test Kitchen 2009: The Year's Best Recipes, Equipment Reviews, and Tastings (Best of America's Test Kitchen Cookbook: The Year's Best Recipes) ReviewI'm a little hesitant these days on rushing out to purchase each and every America's Test Kitchen cookbook. Some are spectacular while others are not of much use to everyday cooks like me. Here's a GREAT one:
The America's Test Kitchen Family Baking Book
...and here's a lame one:
Americas Best Lost Recipes: 121 heirloom recipes too good to forgetIf you've seen the PBS Television Program, "America's Test Kitchen," then you'll know why people are so attracted to their spin-off cookbooks. Program Host Christopher Kimball's mantra is, "We do the work so you don't have to." And they do. Their recipes are quite excellent, (but not necessarily "the very best" in all cases.)
For this cookbook, we're getting the "crème of the crop" of the organization's best 200 recipes from this past year. The editors have also included information from two of the program's popular cameo features, the culinary equipment reviews and, the "tasting" reviews.

12. IndexI have tried a number of these down-to-earth recipes and they're just great. The average cook will find many old stand-bys in here (much improved in most instances) and a good number of innovative recipes which will spark the family's interest at the supper table.
I have only two so-so issues with this cookbook:
-- Due to some overkill in giving details on recipe background and in the recipe preparation(s), the font size is resultantly pretty darn small. You'll find it difficult to post this cookbook in your kitchen and then read along as you cook -- you'll need to squint your eyes.
-- In the tasting section, I found myself frequently disagreeing with the selections which have been recommended and thus, they do me little good. As an example, they recommend Prego Marinara Italian [pasta] Sauce, a product which practically makes me physically ill when I taste it. Conversely they do not recommend Classico Tomato & Basil Pasta Sauce, which is one of my big favorites. Whether I'm right or wrong is not the issue -- the fact is that we all have our preferences and these judgments are so very subjective from person to person that I question the value of including this section in the book.The equipment section (a version of consumer reports) is pretty spot-on, these items not being quite so dependent upon our personal likes and dislikes. With kitchen equipment, most folks seem to share their likes for the same good features. In fact, I bought the pepper mill that they recommended and I find that it suits me just fine.
The book, at 360 pages in length and 8 ½" x 11" x 1" in dimension, is very nicely bound with a rugged dust jacket. The pages are of heavy stock and you'll discover a profusion of helpful illustrations which mostly facilitate better culinary techniques. There are also lots of color photographs of the various completed dishes found throughout the book.
In summary, while this is not a foundational, general cookbook, it's still a great supplement to such works. Noting my minor reservations above, I can recommend it but you might want to check it out at the public library first, before buying, to see if it fits your personal needs.

The Spice Merchant's Daughter: Recipes and Simple Spice Blends for the American Kitchen ReviewIf you notice the other reviews I think they all know the author personally or have taken her cooking classes at some point. Most of them have only written one review for Amazon and that being this book. A couple of them have written 2 so that leads me to believe that the other reviews while well meaning aren't necessarily unbiased. I would like to offer that review as I do not know the author, have never taken a cooking class nor have been paid by her to review the book.
This is it.
I enjoyed reading the book. While it is a cookbook it is also almost a diary. I enjoyed the first chapter where the author describes her childhood and growing enchantment with spices. I too have a similar memory but in rural Kentucky our smells were fat back and chitlins. Everyone remembers their own sweet smells from childhood. Ms. Arokiasamy does a wonderful job of leading us to hers.
One of my pet peeves is people describing most asian cooking as Thai cooking when in fact it is not. And the author knows that and shows us the differences between broad southeast asian cooking and its traditions. The author suggests introducing these spices slowly so that your family will become accustomed to their taste. I think I've heard you need to expose a child 10 times to a new food before they can truly decide if they like it or not.
She as many recipes for making your own spice blends and suggests adding the spice at the beginning of the cooking process if you want it milder in flavor and at the end if you want it strong. Helpful information to know about any spices.
There are recipes for curry powder, garam masala, fiery curry powder, lemon pepper rub, steak and chop rub. The steak and chop rub was delish. I used it over t-bones and the whole family loved it, even the kids. It was not too harsh and added a different flair. I made mine with Worcestershire but you could use soy as well.
The official review by Amazon included words like luscious photography...that is not so. The book is printed on recycled paper so the pictures look like they've been printed on recycled matte paper. They are not beautiful and not really appealing. There are only a few pictures anyway so it doesn't really add anything.
I would have liked more white space in the book to add my own notes and my own takes on the different spice combinations. But I can still do that if I want.
I hope this provided an unbiased review of the book if you were considering getting it I would suggest you do so. And if I'm ever in the Pacific Northwest I'll have to make a point of meeting Ms. Arokiasamy and taking one of her cooking classes.

The Complete Idiot's Guide to Coffee and Tea ReviewIf you've ever wanted to know everything there is to know about coffee and tea, The Complete Idiot's Guide to Coffee & Tea is certainly a good resource. From growing locations to harvesting methods, processing to transport, home-roasting to blending, and even the best way to pull a shot of espresso, Travis Arndorfer and Kristine Hansen explore the world of these gourmet beverages from start to finish.
For sheer volume and completeness of information this book is a winner; I learned an incredible amount of wonderful history and useful information from it. For liveliness of writing--an important consideration in the long-running "Complete Idiot's Guides" line, which strives to make often-complex subjects accessible to the general public--it does a solid job, although it's hard to go step-by-step through the complexities of pulling espresso, properly tamping grounds, and cleaning an espresso machine without things getting a tad boring.
I have only one major reservation regarding this book, and it was enough to bring my rating down a bit. The authors manage to convey the impression through all of their detailed information that unless you're buying incredibly fresh beans, grinding them with an expensive grinder, brewing them with an expensive brewer, and preferably roasting green beans yourself in small batches with your own roaster, then you're simply not drinking good coffee. I honestly couldn't look through their recommendations and find a middle ground that I'd consider affordable that they'd consider drinking good coffee.
Given the typical market of the CIG books, this seems incongruous. It's one thing to tell you how to spend incrementally more depending on your budget and time available to get the most out of your coffee experience, but this book makes it seem like no one except wealthy, semi-retired folks or professionals who do this for a living can make "good" coffee. That's a shame, because I think it's likely to make a good handful of readers throw up their hands and say "well, if I can't do it right, why bother to go beyond my normal cheap cup and explore any of this at all?"
If you have an interest in the details of coffee and tea I do recommend that you pick up this book. Just make sure you're willing to be a little stubborn in putting aside the authors' overly-restrictive definitions of good coffee, and go with what you feel up to.The Complete Idiot's Guide to Coffee and Tea OverviewA freshly brewed introduction to the caffeine subculture. A16: Food + Wine ReviewI've been waiting for this book to come out and it's finally here! I write a food blog about Italian cooking and I absolutely love this beautiful book. A16 is an Italian restaurant in San Francisco which prides itself on cooking authentic food from the Campania region of Italy. It is named after the highway that connects Naples to Puglia, the "A-16". This is the highway from which the owners of the restaurant explored this region of Italy - tasting wines and eating food all along the way.
The book begins with one of the largest and most comprehensive discussions on southern Italian wines, written by wine director Shelley Lindgren. Covering wine from Campania to Sardinia, it's a full 58 pages! Anyone interested in Italian wines should pick the book up for this section alone. One of the white wines she writes about, Falanghina, intrigued me so much I ran right out and bought a bottle. It was such a nice surprise, a really delicious wine and such a change from the mediocre Chardonnays we have too much of around here.
One of the things I loved about this book is the attention to ingredients - it is not just a book of recipes. Chef Nate Appleman devotes a dozen pages to explaining key ingredients and their uses such as San Marzano tomatoes, salt, bottarga, anchovies, capers, herbs, olive oil, cheeses and vinegars. There is also an interesting section explaining the differences in the flours used in pizza making and the difference it can make in your pizza dough. There is a whole section devoted to pizza making which I found helpful. Chef Appleman talks about visiting the famous pizzeria in Naples, "Da Michele" and discovering the secret to its outstanding pizza dough - addding older, fermented dough to fresh dough to build a more complex flavor. A16 uses a method which replicates this taste - letting the dough proof for 2-3 days (which I'm going to try for our weekly pizza nights at home!)
The recipes in this book range from Antipasti to Desserts, with dishes such as Bruschetta Four Ways, Ricotta Gnocchi, Bucatini with Fava Beans and Pancetta, Chicken Meatballs with Peperonata, Short Ribs alla Genovese, Chard Gratinata with Bread Crumbs and Pistachio and Almond Cake. Each recipe is thoughtfully paired with a wine selection. Nice touch. There are also thoughtful discussions on the techniques of making soffritto, meatballs and fresh pasta.
There is also a comprehensive "Resources" list at the back of the book for hard to find ingredients.
Anyone interested in good food and wine will love this book. The photography is gorgeous.A16: Food + Wine Overview

In June, 2001, I wrote about "Home Coffee Roasting":
"This book is worth several times its purchase price for the two-page roasting chart alone. As a technically-oriented (read: geek) amateur roaster with three (3) roasters (a Hearthware Precision, an Alpenrost, and the fabulous Sonofresco fluid bed) I am constantly referring to this book to improve my art and understanding.
But, amazingly, the book -- only a few years in print -- is now dated, because the equipment options for the home coffee roaster have increased so much. My three roasters (or the types they represent) are not covered. That's the only reason that I gave this 4 stars instead of 5. But if you roast coffee at home -- regardless of your equipment -- you need this book.
What else is missing? I'd love to see a table in the appendix covering the top 50 (or so) growing regions and rating the AVERAGE bean on acidity, sweetness, body, finish, etc, so that one has a clue where to begin when making a blend. The professional coffee roaster is cupping samples all day long, and quickly learns the characteristics of the world's coffees. But we amateurs, buying 1, 2, or 5 lbs at a time could use a secret decoder ring that would tell us in advance what variety we should order that has a good chance of rounding out that blend that is "not quite there yet." Short of that, David's excellent narrative coverage in the book of different coffee characteristics will have to do."
With the release of the "Revised, Updated Edition", the book no longer merits the caveats I described. In particular, Davids has meticulously covered the wide range of available home -- as well as cafe or semi-professional -- roasting equipment, and has excellent coverage of the growing availability of equipment and green coffee sources via the Internet. After 5 years of blending and roasting many pounds per week, and as a writer, I probably could by now have almost written this, and yet I found it endlessly entertaining and informative. Someone new to the hobby will, as I said in 2001, find it indispensable.

The Gourmet Slow Cooker: Simple and Sophisticated Meals from Around the World ReviewI've tried three recipes so far from this collection, each one more complex than the last, as I gain my trust in this author. The Baked Eggplant was ridiculously easy (just cut the eggplants into cubes and cook on low for 4-6 hours, then add the seasonings after the cooking is done.) Next I tried the Tuscan White Bean Soup, which was excellent and not at all watery, like most crock-pot soups. Finally, I made a pot of Mexican Chicken in Peanut and Ancho Chili Sauce, and I can finally say that I've found a crock pot book that really does work.
The author encourages crock-pot users to lift the lid and stir while the food is cooking; I heartily agree, because the food ends up well cooked and NOT the watery, insipid mess I usually got. These are recipes that will not taste like a well-meaning, "good-for-you" home economics project. But this means you can't start your supper in the morning and have it done when you're back from work: the result may be watery. That's been my experience with other books, like Judith Finalyson's.

Flour Power: A Guide To Modern Home Grain Milling ReviewI'm a bread-baking microbiologist with a different take on this book. One reviewer thought it had too much info but I think when an author examines a topic microscopically - without leaving a
who-what-where-when-why question about any aspect - the reader can't lose. And even if you happened to decide milling wasn't for you (a possibility another reviewer speculated about), the book is still a treasure trove of tidbits, details, history and how-to's that make for satisfying reading on a hot-tea evening.
Once I got my mill (I took one of the "quick-pick" options the author provided.) and some good high-protein wheat (I'm lucky to have the legendary Bob's Red Mill within driving distance.), it
was surprisingly easy to get bread without a hassle every three days or so. Although the bread machine makes a crust slightly thicker than I like, the rest of the bread is incredible and it's truly a time-saver. As the author of this book stresses, it's not the milling that takes time, it's the bread making.
Another book I recommend to real gourmet bakers (the kind who wouldn't stoop to a bread machine) for some delicious and heart-healthy ways to use home-milled grains is "Mediterranean
Grains and Greens" by Paula Wolfert. Similarly well written and detailed, it provides a tantalizing glimpse of a whole new realm of possibilities for using whole grains (and greens).Flour Power: A Guide To Modern Home Grain Milling OverviewThe only book written on modern home grain milling. This book manages to present a technical topic in a fascinating and entertaining way. Unusually detailed and littered with historical tidbits. Includes mill selection criteria, an education on bread wheats, secrets for making deliciously light whole meal breads, and purchasing contacts for dozens of grain mills, plus oat rollers and bread wheats.
